Chemical Name: Monascus Yellow
Application:
Primarily used as a colorant for candies, jellies, cold drinks,
and other food items.
It can also be used to color cooked meat products (such as salt-baked chicken),
pastries, fruit and vegetable juice (meat) drinks, protein drinks, carbonated
drinks, flavored drinks, solid drinks, blended liquor, and other food items.
Product Characteristics:
Monascus Yellow is a yellow to yellowish-brown powder, block,
paste, or liquid with a slight characteristic odor and is soluble in water.
The color remains stable and vivid yellow under acidic conditions, but it may
change gradually to red under neutral or alkaline conditions.
It has strong heat resistance (above 121°C), good light and heat stability, and
a wide pH adaptability range.
