Application:
As a colorant: Alkannin, due to its unique red color,
is often used as a natural colorant.
Antioxidant and preservative effects: Research has
shown that when the addition level of alkannin is 0.15%, the alkannin coating
agent exhibits the best antioxidant and preservative effects.
Antibacterial activity: Alkannin has
antibacterial activity against bacteria such as Escherichia coli,
Staphylococcus aureus, Rhizopus, and Mucor.
Medical research: Alkannin has been found to inhibit the
proliferation of gastric cancer cells in a concentration- and time-dependent
manner. Additionally, it can also inhibit the adhesion of gastric cancer cells
and induce apoptosis.
